Broccoli Black-Eye Pea Salad

Directions

Lightly coat yams in olive oil. Place yams on sheet pan lined with parchment. Season with salt and pepper. Roast in 375 degree oven until tender yet firm, about 20-25 minutes. Set aside.

Lightly coat red peppers in olive oil. Place on sheet pan lined with parchment, roast in 375 degree oven for 15 minutes.

Assemble salad-
Combine all ingredients. Lightly coat with dressing. Leftover dressing will keep in refrigerator for 1 week.

Honey-Cider Dressing
Combine all ingredients and emulsify until blended.
