Baked Egg Broccoli Confit
Preheat oven to broil. Grease ramekins or individual baking dishes with butter.
Place broccoli florets in base of dish, about 3-5 depending on size of ramekin. Make a well with broccoli and crack 2 eggs into each dish. Nestle tomato wedges in ramekin; add quarter of bacon to each dish.
Sprinkle parmesan, herbs, nutmeg and season with salt and pepper. Transfer to top rack in oven, broil until whites have set, and cheese is golden.

Cooking decreases the glucoraphanin content of Beneforte broccoli as it does for all broccoli. The best way to get the health benefits from any broccoli is to eat it raw or lightly steamed.
