Mexican Tortilla Cups

Heat non stick pan over medium high heat. Add a little vegetable oil, cook the ground meat and separate chunks with whisk for about 5-7 minutes or until browned. Add salsa, tomato paste, season with salt and pepper stirring until coated. Add beans and cook for 3-4 minutes more. Can be made ahead.

Coat quartered tortillas with oil. Lightly coat muffin tins. Place tortillas in muffin tins pressing along sides until firmly in place. Bake tortillas in 350 degree oven for about 5 minutes until lightly golden.

Assemble tortilla cups.
Place lettuce cup on base of tortilla cup, add hot meat mixture, garnish with broccoli, cheddar, tomato, salsa, and crème fraiche. Serve with lime.
